Zucchini Recipe Roundup

Layla the Gardener says zucchini season is coming to a close, and my life will no longer be a race against time to use zucchini in as many recipes as possible. Yes, she said all that. Unfortunately, she can’t say when the tomatoes will start over-populating my household, because she’s a lazy gardener.

So I thought I’d do a Zucchini Recipe Roundup. This made me realize that I actually didn’t make that many recipes starring zucchini, but it’s still a great start for next year when everyone with a garden becomes overwhelmed with them again. Two versions of zucchini fettucini: Version 1, Version 2

So there you have it, all my zucchini recipes. I can’t wait for apple season and all the new recipes I’ll get to experiment with!

Is anyone else getting excited for fall? The weather has been a little cooler lately, and it reminds me of everything fall and how great it is. Summer is amazing, but I think fall may be my favourite season.

Just a question: What was your favourite university/college course?
I’d have to say mine was Italian. I’d love to take an advanced course in it. It’s such a cool language and I was actually engaged in the class, rather than sitting on Facebook or Twitter the whole time. Not that I do that normally…….. ;) Blah. Sometimes classes are boring though!

Cowboys And Iron Chefs

These next couple days will be the final zucchini hurrah on the blog. If I was on Iron Chef America, I could totally kick Bobby Flay’s ass if the secret ingredient was zucchini.

Starting sometime next week will be tomato-focused recipes and a couple of fun summery desserts!

But first…

Last night, I attended one of the best concerts I’ve ever been to. I have ALWAYS wanted to see Keith Urban in concert & when Adam bought the tickets, I was beyond thrilled. I have never had so much fun at a concert before!!! He sang all of his hits, plus a couple new ones that I really liked!

Jake Owen was the opening act, and he was fantastic! Both of them seemed like they were having an absolute blast performing and thus, the entire audience was involved and having a blast too. If you haven’t heard Barefoot Blue Jean Night by Jake Owen, I’d recommend downloading it; it’s the perfect summer song. Then it was time for some Keith! 

And now… australian cowboy hotness aside, it’s time for my next zucchini recipe.

Stuffed Zucchini! 

  • zucchini cut in half length-wise and the seeds/pith scooped out
  • lean ground turkey
  • basil & oregano (about 1/2 tsp each)
  • 1 medium onion chopped into small pieces
  • 1 cup quinoa
  • 1 large can of tomato juice + another cup of tomato juice
I used 2 zucchini, but mine were so huge that it was all I needed. You can definitely tweak this recipe to fit the number of zucchini you have + the size of your bakeware.

Sautee the onions and let the ground turkey brown in a pan. Break up the turkey, add the spices & the quinoa. Mix it all together & fill your zucchini boats. Ladle tomato juice around and on top of the zucchini, cover and cook in the oven for an hour at 450.
Before: After: These were delicious! They were purely experimental, as I have never tried stuffed zucchini before. Although, in my desperate state to use up all my zucchini, I may get delirious and start cooking zucchini stuffed zucchini. If you have a friend with a large vegetable garden, take advantage of them. They will appreciate it. I’m off to install my new faster wireless router and then I’m heading out for a long rollerblade. Happy Sunday!
