I’ve Gone Cupcake Crazy

Before I got into the blogging world, I was just a reader, and a silent one at that. I never commented on anything, I just enjoyed the posting. When I decided I want to get into the blogging world, Chocolate Covered Katie was one of the blogs that inspired me to do so. So I’m going to pay a little homage to her by putting my own spin on her Single Lady Cupcakes :)

I made three, and they were purely experimental. If they turn out, I’m definitely going to make more.

I started out with a slew of ingredients before I came up with three flavours of my own.

The first one was my favourite flavour combo of all time – Chocolate Mint. *drool

I combined the following ingredients:

  • 3 tbls unbleached flour
  • 1 tbls apple sauce
  • 1 tbls almond milk
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla extract & peppermint extract
  • 1 tsp pure cacao
  • a couple dark chocolate chips :D
The second one was a Honey Almond Single Lady Cupcake (muffin….?)
  • 3 tbls unbleached flour
  • 1 tbls apple sauce
  • 1 tbls almond milk
  • 1/4 tsp baking powder
  • 1 tsp Justin’s honey almond butter
  • a 4-second squirt of honey
  • a couple chopped almonds on top
The third one was my favourite because it was pink! It was the most beautiful looking cupcake. I’ll call it the Pink Lady Cupcake.
  • Same 4 ingredients as the last one
  • 1/4 tsp vanilla extract
  • 2 tbls mixed berries (I used a thawed frozen berry mix)
  • 4 second squirt of honey
Just bake them at 330 degrees for 14 minutes. I used my mini-muffin pan, so they came out a little petite, but that just makes them more adorable!
I had to sample all three of them, of course ;)
The Chocolate Mint one was chewy, minty & chocolatey! I think next time, I might use a little less mint, but I adored this cupcake!

The Pink Lady Cupcake, oh my goodness. Moist, berry-y, PINK, ridiculously perfect.

The Honey Almond – I ate the whole thing, right away. It was pure perfection. The middle of it had the consistency and taste of almond butter, while all around the outside was fluffy & cakey. The almonds on top added the perfect crunch. This one might be my favourite.

I'm not sure why, but this one just gave off a 'sophisticated french lady' vibe.

Did I mention these are healthy and low calorie? There are about 110 calories each. They have no trans fats, no stupid, processed ingredients, and they taste SO GOOD. I’m off to make another batch of them. I strongly urge everyone to try these. Not only are they healthy, but they are so simple! And HIGHLY customizable. The flavour options are absolutely endless, and they can double as a breakfast muffin as well as a dessert. Banana walnut, anyone?
