So… I made some more muffins last night, and I am incredibly sad to report that they did not turn out as lovely as the ones I made previously. They weren’t a joy to eat, but more like a task just to try them. I absolutely cannot stand the texture of muffins when they are too mushy. Such is the case with anything I attempt to bake with zucchini, so I don’t do that anymore, but these were some great muffin ideas that fell flat.
I came up with three new flavours I wanted to try: Chocolate Almond, Honey Berry and Banana Peanut Butter.
All three were delicious in theory, but each had a bad execution & suffered an untimely muffin death.
Luckily, I now realize my errors in baking, and I am remaking them again today. I just feel guilty that I wasted those ingredients. Blaaah.
Mistake Numero Uno: I waaaay overfilled the cupcake tins.
Honestly, after 15 minutes in the oven, these muffins came out like bricks. They were so heavy! I realized right then & there that they wouldn’t be very good. 
I felt discouraged, but not defeated with this muffin mess. As I begin to blog my life more & more, you’ll realize that things like this happen often, and I learn by the mistakes I make. Not just with baking though. So I’m going to tweak the recipes a bit, bake them like a responsible adult, and blog about them again sometime today!
I woke up this morning around 7:15 to a very muggy breeze blowing into my window. I thought it was going to be a bit chilly out for the morning, so I threw on a sweater & some cropped pants and went out for a run. It progressively got hotter & muggier as my run progressed, so by the time I ran up the hill, I was sweaty & panting like a dog.
I ran/walked & sweat for about an hour & 15 minutes then came home & what was my first thought for breakfast? Hot oatmeal! Of course! I had no idea why I would want a hot bowl of oatmeal, but it just felt right at the time.
About an hour later, while currently blogging this post, I wanted a little something sweet so I combined 3 tablespoons of Liberte Vanilla greek yogurt with some pomegranate seeds & a drizzle of honey.
No. Just no. I love Chobani, & I’ll gladly drive 40 minutes to stock up on it. This was the only greek yogurt I could find in my local grocery stores, and this combo just tasted all kinds of wrong. Why am I being so picky lately? Yeesh. Diva behaviour over some greek yogurt.
Well I’m off to run some errands, so I shall write ya’ll in a bit with my (hopefully) new & improved muffins & I also have some beach pics from Sunday to post!
